Ingredients for Tortang Talong (Eggplant Omelet) with Ground Meat
Eggplant – 4 pieces –medium size
Ground Pork/beef – 1/4 kilo
Egg – 3 pieces – beaten
Onion – 1 medium size – chopped
Garlic – 3 cloves – chopped
Salt and pepper – to taste

How I do it
First you need to grill the eggplants until the color of the skin turns to black. Peel of the skin of the eggplant once it was already cold. In a bowl, crack the 3 eggs and some salt and pepper and beat. Place and flatten the eggplants on a big plate or just enough to accommodate the size of the eggplant. Add the beaten egg and dip.
Now heat the pan and add cooking oil. Add the garlic and onions, stir in 2 minutes and add the ground beef. Stir occasionally until its cook. Set aside.
Again heat the pan and add cooking oil. Add the eggplant that dip in egg, add the ground beef flatten on top. Add some egg when necessary. Flip carefully to cook the other side. Do it one at a time.
Serve it with love.

Una ihawin muna ang talong hanggang sa kulay ng balat ay maging itim. Balatan ang balat ng talong kapag ito ay malamig na. Sa isang mangkok, ilagay ang tatlong itlog at kaunting asin at paminta at batiin. Ilagay at patagin ang talong sa isang malaking plato o lalagyanan na sapat ang laki ng mga talong. Idagdag ang binating itlog at ibabad.
Ngayon initin ang kawali at ilagay ang mantika. Ilagay ang bawang at sibuyas, ihalo ng 2 minuto at igisa ang karne ng baka. Haluin paminsan-minsan hanggang sa maluto. Itabi.
Muling initin ang kawali at maglagay ng mantika. Idagdag ang talong na binabad sa itlog, idagdag ang ginisang karne ng baka at patagin sa itaas. Magdagdag ng unting itlog kapag kinakailangan. Ibaligtad ng maingat at lutuin. Gawin ito ng paisa isa.
