How to cook Kare-kare
Kare-kare is one of the favorite of our family. Every time we’re am going back for vacation kare-kare is one on my check list to my mom to cook for me. Luckily before I am going back to KL she teaches me how to do it. This is also a bonding moment with me and my mom. She teaches me the traditional way of cooking kare-kare. It is a long process of how to make the sauce or the soup of the kare-kare. But thanks to technology, now I can make it with the pre-mix kare-kare.

I know my mom’s kare-kare is better than the kare-kare mix. But this kare-kare mix is a big help for me as an OFW.  

Kare-kare is also one of the best dishes in the Philippines. Popular restaurant like Max listed kare-kare on their menu. I wish I can order this in a fast food chain like Jolibee someday.LOL

Ingredients for Kare-kare
Beef tripe – 1/2 Kilo – cut rectangle
Eggplant – 3 medium size - cut diagonally
Banana Bud – 1pc. – cut diagonally
Long Beans – 1 bundle - cut in 2” long
 Pechay – 1 bundle
Garlic – 1/2 head – chopped
Onions – 2 pieces large – chopped
1 Mama Sita’s Kare-Kare Mix
Cooking oil
Bagoong Alamang

How I do it
Put water in a pot, add the beef tripe, cover and bring to a boil. Let the beef tripe be tender and add water if required. Separate the beef tripe and let it cool.

Heat the sauce pan, put the cooking oil, and add the garlic and onions. Add the beef tripe, stir and cook for 5 minutes then pour 3 cups of water and let it simmer for 5 minutes. Add the kare-kare mix (the Kare-Kare mix should melt into 1 cup of water) and the banana bud. Cover and simmer until the sauce thickens. Add the eggplant and beans, cook until it is tender then add the pechay for 2 minutes.

Prepare the bagoong alamang when you serve it with love.

Sa Tagalog
Maglagay ng tubig sa isang kaserola, ilagay ang beef tripe, takpan at pakuluin. Hayaan lumabot ang mga karne at magdagdag ng tubig kung kailangan. Paghiwalayin ang mga karne at hayaang lumamig.

Initin ang kawali, ilagay ang mantika, at ilagay na rin ang bawang at sibuyas. Idagdag ang beef tripe, haluin at lutuin ng 5 minuto, pagkatapos ay maglagay 3 tasa ng tubig at hayaan itong kumulo ng 5 minuto. Ilagay ang Kare-Kare mix (ang Kare-Kare mix ay dapat tunawin na sa 1 tasa ng tubig) at banana bud. Takpan at hayaang kumulo hanggang ang sarsa ay kumapal. Ilagay ang talong at sitaw, lutuin ito hanggang sa lumambot at pagkatapos ilagay ang pechay ng 2 minuto. Ihanda ang bagoong alamang at ihain nang may pagmamahal.

Ready in 120 minutes or in 2 hours.

How to cook Paksiw na Lechon Baboy

Yesterday, we celebrate the welcome party of my son at my house. Since my son was born at KL and just came for 2 weeks vacation. All his auntie and uncle came and his grandparents of course. Its looks like we have a family reunion. They bring foods as we still can’t cook a lot in our unit since we just move in 1 week ago. Pansit bihon, pork menudo, dinuguan and cake are in their list.

My brother who works in Qatar gave one lechon baboy. After the party the leftover is still plenty. So in the next day I cook it which called as Paksiw. I just bought 1 bottled all-purposed lechon sauce. This is easy as heating food.    
Ingredients for Paksiw na Lechon Baboy
Lechon – leftover (half kilo) – cut in bite size
Lechon sauce – 1 cup
Vinegar – ¼ cup
Garlic – 1/2 head – chopped
Bay leaf – 2 pieces
Peppercorn – 1/2 tablespoon
Soy sauce – 2 tablespoon
Sugar – to taste

How I do it
In a sauce pan put the left over lechon and add the garlic, peppercorns, vinegar, soy sauce, and the bay leaf. Put water about an inch above the meat. Bring to a boil and simmer until the meat will start to be apart. Add in the sugar and lechon sauce and cook in a medium heat for 5 minutes.

Serve it with love.

Tagalog Version
Sa isang kawali ilagay natirang lechon at ilagay ang bawang, pamintang buo, suka, toyo, at ang bay leaf. Ilagay ang tubig na may isang pulgada ang taas sa karne. Pakuluin ito at hayaan hangang maghiwahiwalay. Maglagay ng asukal at lechon sauce at lutuin sa isang katamtamang init ng 5 minuto.

Ihain ito nang may pagmamahal.

How to cook Tortang Talong (Eggplant Omelet)

Tortang talong is one of my favorite styles when cooking the eggplant. This is best when eggplant are cooked pre-grilled than boiled in water. Tortang talong is a simple and easy to prepare. 


Ingredients for Tortang Talong (Eggplant Omelet)
Eggplant – 4 pieces –medium size
Egg – 2 pieces – beaten
Salt and pepper – to taste
Cooking oil

How I do it
Grill the eggplants; wait until the color of the skin turns to black. (You can also boil the eggplants if it is not possible to grill it.) Peel of the skin of the eggplant once it was already cold. In a bowl, crack the two eggs and some salt and pepper and beat. Place and flatten the eggplants on a big plate or just enough to accommodate the size of the eggplant. Add the beaten egg and dip. Now heat the pan and add cooking oil. Then fry the eggplant and make sure that you cooked it both sides’ ways. It will take about 4 minutes per side.

Serve it with love.


This is the simple way to make tortang talong. Next time I will show you how to make tortang talong with ground beef.  

Sa Tagalog
Ihawin ang talong hanggang ang kulay ng balat ay maging itim. (Maaari mo ding pakuluan ang talong kung ito ay hindi posible na ihawin ito.) Balatan ang balat ng talong kapag ito ay malamig na. Sa isang mangkok, ilagay ang dalawang itlog, kaunting asin at paminta at batiin ito. Ilagay at patagin ang talong sa isang malaking plato o sapat na plato na kasya ang laki ng mga talong. Idagdag ang binating itlog at ibabad. Ngayon initin ang kawali at ilagay ang mantika. Pagkatapos iprito ang talong at siguraduhin na luto ito sa magkabilaan. Ito ay tumatagal ng 4 minuto sa bawat panig.

Ihain ito nang may pagmamahal.
