How to cook Paksiw na Lechon Baboy

Yesterday, we celebrate the welcome party of my son at my house. Since my son was born at KL and just came for 2 weeks vacation. All his auntie and uncle came and his grandparents of course. Its looks like we have a family reunion. They bring foods as we still can’t cook a lot in our unit since we just move in 1 week ago. Pansit bihon, pork menudo, dinuguan and cake are in their list.

My brother who works in Qatar gave one lechon baboy. After the party the leftover is still plenty. So in the next day I cook it which called as Paksiw. I just bought 1 bottled all-purposed lechon sauce. This is easy as heating food.    
Ingredients for Paksiw na Lechon Baboy
Lechon – leftover (half kilo) – cut in bite size
Lechon sauce – 1 cup
Vinegar – ¼ cup
Garlic – 1/2 head – chopped
Bay leaf – 2 pieces
Peppercorn – 1/2 tablespoon
Soy sauce – 2 tablespoon
Sugar – to taste

How I do it
In a sauce pan put the left over lechon and add the garlic, peppercorns, vinegar, soy sauce, and the bay leaf. Put water about an inch above the meat. Bring to a boil and simmer until the meat will start to be apart. Add in the sugar and lechon sauce and cook in a medium heat for 5 minutes.

Serve it with love.

Tagalog Version
Sa isang kawali ilagay natirang lechon at ilagay ang bawang, pamintang buo, suka, toyo, at ang bay leaf. Ilagay ang tubig na may isang pulgada ang taas sa karne. Pakuluin ito at hayaan hangang maghiwahiwalay. Maglagay ng asukal at lechon sauce at lutuin sa isang katamtamang init ng 5 minuto.
